Ingredients
1 tablespoon Butter
2 tablespoon Garlic chopped
1 Onion chopped
1 medium Capsicum chopped
2 Green Chilli chopped
250 gms Boneless Chicken (boiled and shredded)
Half teaspoon Crushed Black Pepper
Some Coriander chopped
Half teaspoon Mixed Herbs
Half teaspoon Chilli Flakes
3 tablespoon Mayonnaise
Some Bread Slices
Mozzarella + Processed Cheese
2 Eggs
Bread Crumbs
Oil for frying
Steps
Boil 250 gms boneless chicken by adding little red chili powder, Some salt, half teaspoon ginger garlic paste and keep aside for further use.
Heat 2 tbsp butter in a pot, you can use oil or ghee instead of butter, add 2 tbsp chopped garlic and sauté till golden.
Then add 1 chopped onion,1 medium-size chopped capsicum, 2 chopped green chili and sauté it for a minute.
Add the boiled and shredded chicken to the mixture and sauté on a high flame by stirring for 2 minutes until all the flavors of garlic and chicken are mixed together leaving a good aroma.
When the chicken is properly mixed with all the spices off the flame. And add half teaspoon crushed black pepper and give a good mix and then allow the mixture to cool.
When the mixture is cooled add some chopped Coriander leaves, half tsp mixed herbs, half tsp chili flakes, 3 tbsp mayonnaise and mix it well.
Now take the slices of bread. Cut the edges of each slice and then roll the bread slice with a rolling pin to flatten it.
Repeat this with each slice of bread as many as you have to make.
Then dip the edges of the rolled bread slices in water to make it a little soft. By doing this your bread slices will stick properly with each other to make a tight chicken parcels.
Place 2 tbsp of chicken mixture in between these bread slice and then top it with some grated mozzarella and processed cheese. The quantity of cheese depends on your taste. You can use it less or more as per your choice.
After topping the cheese on the chicken mixture, cover it with the other bread slice and press the edges of both the slice to make them stick together.
As they have been dipped in water, they will be soft and stick together very easily.
Now your chicken cheesy parcel is ready. Make the remaining parcels in the same manner, then cover them with a piece of cloth as the bread may get hard if kept open.
Take 2 eggs, beat them by adding a little salt, take each parcel and dip in the beaten egg and then roll it with bread crumbs and place in the dish. Now they are ready to fry or store.
These chicken patties are a great option for stocking your freezer.

Now heat oil in a kadai to deep fry, keep the flame high as all the ingredients inside the parcel are cooked so deep fry them on high flame till golden brown on both sides and then remove and serve hot with your favorite dip Chutney or ketchup.
