Today’s recipe is a slight twist from our normal samosas. Wrapped up in a box and hidden in with a surprise. What is it? Cheese, of course. I had made this just randomly to finish off some of the cheese that was lying in the house and everybody enjoyed. What I love about this dish is that when you rip off from the center, the way the cheese pulls itself is to die for… These yummy pockets are best combination of chicken, vegetables and cheese, its taste is creamy and buttery.

This is a delicious snack recipe where you get to enjoy the flavour of chicken, cheese and veggies wrapped in a pocket of potato and semolina which makes it unique, crispy and Yummy!

Chicken Cheese Pockets
Ingredients
125 grams Refined Flour
2 tablespoon Semolina
1/2 teaspoon Red Chilli Powder
1/2 teaspoon Salt
1/2 teaspoon Carrom Seeds
1 tablespoon Ghee
3 big size Potatoes (boiled and grated)
Fresh coriander
1/4 Cup Water
150 grams Chicken boiled and shredded
20 gram Cheese grated
3 tablespoon Sweet Corn
2 tablespoon Capsicum chopped
1 green chilli
Greens of Spring Onion
Fresh Coriander
1/2 teaspoon Chilli Flakes
1/2 teaspoon Mixed Herbs
1 small potato (boiled/ grated)
Crushed Black Pepper
3 tablespoon Refined Flour
Steps
In a bowl take 125 grams of refined flour( maida) that is one cup, if you do not eat refined flour, you can use wheat flour instead of this, add two tablespoons of semolina , half teaspoon red chilli powder, half teaspoon salt, half teaspoon Carrom seeds crushed it with your fingers then add 1 tbsp ghee.
Mix all this with your hands by pressing it tightly.
Take 3 big size boiled and grated potatoes, add to this mixture, then put chopped green coriander and mix it well to make a dough.
Do not add any water at first, mix it properly with your hands to make a dough , then use 1/4th cup of water gradually to make a stiff dough .
Cover the bowl of dough with a lid, let it rest and keep it aside .
Now let us go to the next step to make the filliing of chicken.
In a bowl take 250 grams of boiled and shredded chicken (boil chicken by adding salt and shred it), 200 grams of cheese, two tablespoon sweet corn boiled, two tablespoon chopped red capsicum, one green chilli chopped, some Green part of spring onion chopped, chopped coriander leaves, half teaspoon Chilli flakes, half teaspoon Mixed Herbs (if you do not have mixed herbs use oregano), some crushed black pepper powder, one boiled and grated potato.
Now mix all these ingredients well, check the salt at this point if needed add.
Now the chicken filling is ready.
Let us make the slurry, take three tablespoon of refined flour in a small bowl , add water to it to make a thick slurry, mix it and keep ready.
Take a big ball from the dough, make a big Roti out of it, the thickness of the Roti should be as normal as you make roti.
As the roti is round in shape so cut the edges of the Roti so it will turn into square shape.
Now cut the square into 4 equal parts, brush the slurry on the edges of the two square pieces, then put the chicken filling in the centre of the square roti approximately one tbsp of filling, then cover it with the other square roti and press it at the edges so it will get stuck to the slurry the help of your fingers to make a square pocket.
Prepare all the pockets in the same manner, keep it covered with a towel or else the pockets will get dried.
Now heat oil in a Kadai on medium flame, do not heat the oil too much fry chicken pockets on medium to low flame till golden brown in colour.
Let the pockets rest for a few minutes before serving.
Cut the pockets and serve with your favourite chutney or ketchup.
