Chicken Mayo Roll
Ingredients
2 tablespoon Oil
1 tablespoon Garlic chopped
1 Small Onion chopped
2-3 Green Chillies chopped
3 big size Potatoes grated
150 grams of Chicken Boneless (boiled and shredded)
Small Carrot grated
1 Capsicum chopped
1 teaspoon Salt
2 teaspoon Soya Sauce
1/4 teaspoon Garam Masala
1/2 teaspoon Chilli flakes
Green coriander
1 teaspoon Lemon Juice
2 tablespoon mayonnaise
Refined flour
1 Egg
Panko Bread Crumbs
Steps
In a pan heat 2 tablespoon of oil, add 1 tbsp garlic, sauté for half a minute on medium flame
Add 1 small chopped onion , 2-3 green chillies chopped, stir it and cook for half a minute.
Take 3 big size potatoes, grate them, put them in a bowl of water to soak and then wash them 2-3 times with water and then let them drain in a big strainer (chalni) to dry.
Boil 150 gms boneless chicken with little salt and shred it. Transfer this boiled and shredded chicken to the pan, add grated carrot, chopped capsicum, fry it on high flame for 2 minutes then add the grated potatoes
We have not boiled the potatoes it is raw we have just grated it, add 1 teaspoon salt, 2 teaspoon soya sauce we are using light soya sauce so if you are using dark one add 1 teaspoon
Add 1/4th teaspoon garam masala powder, 1/2 teaspoon chilli flakes amd mix all these ingredients on high flame for 2 minutes.
After cooking for 2 minutes if there is any moisture left you may fry it for one more minute, so the grated potatoes are also cook well and the mixture will turn dry.
Add coriander leaves, 1 teaspoon lemon juice, give it a mix and then off the flame.
Transfer this mixture in to a big bowl, let it cool down.
When the mixture has cooled down, add 2 tablespoon mayonnaise to it and mix it well. At this point check the salt, if its less adjust it.
Our batter is now ready. Grease your hands with oil and make long shape rolls out of this mixture.
Take some refined flour in a dish.
Beat one egg and add little salt in other dish.
Now coat these rolls in refined flour maida, then dip in egg and then coat it with panko bread crumbs.
By coating these rolls with panko bread crumbs, your rolls will turn out to be crunchy and flaky.
Now these rolls are ready to fry and store also. Approx. 16 rolls can be easily out of this batter.
After coating them with breadcrumbs keep this rolls in freezer for 3 hours after that remove it from the freezer and store it in air tight container or zip lock bag ,so you can store them in freezer for weeks.
We are storing 6 rolls in one bag so they will not stick to each other and will be easy to remove and fry if you just need some for iftaar.
Heat oil and deep fry this chicken mayonnaise roll on high to medium flame till golden brown and serve it hot with your favourite chutney, ketchup or dip.

Points to remember * Add mayonnaise only when the mixture is properly cool down. * While frying the rolls do not overcrowd the kadai or the temperature of the oil will drop, just fry 3 to 4 at one time.
