Chaat for an Indian is not just a dish, but an emotion. Literally, a ‘chaat’ would mean ‘to lick‘ or ‘to taste‘. True, because you really cannot stop yourself from doing so once you indulge in this mélange of flavors. The same goes for this Corn Chaat too. It may be wholesome and simpler than the rest, but still is perfect. This vegan Corn Chaat recipe is a tangy amalgamation of steamed/boiled sweet corn tossed with flavorful chaat masala, fragrant herbs and earthy spices.
Corn cobs have a special place in India as the quintessential monsoon snack, where the produce is roasted on charcoal till well charred, then slathered optionally with butter and finished with a drizzle of lemon juice, some salt and chili powder. The joy of having corn cobs or ‘bhutta’ like this, on a rainy day, is unparalleled.
Of course, this can be made at a home pantry too, in a similar or different way, using ingredients as per personal preferences. Besides this, corn is quite versatile as it can also be used to add a texture and unique taste in patties, cutlets, mixed vegetables, rice dishes or fried as crunchy munchies.

1/4th teaspoon Turmeric Powder
2 cups Sweet Corn
1 tablespoon Butter
3 teaspoon grated Processed Cheese
Fresh Coriander leaves
Less than half teaspoon Red Chilli Powder
Less than half teaspoon Chat Masala
2 teaspoon Lemon Juice
Half teaspoon Mayonnaise
1 pinch Mixed Herbs
Masala Corn Chaat
2 to 3 tablespoon chopped Onion
2 tablespoon chopped Tomato seedless
1 chopped Green Chilli
2 teaspoon Lemon Juice
1/4th teaspoon Cumin Powder
1/4th teaspoon Red Chilli Powder
Half teaspoon Green Chutney
1 teaspoon Tomato Ketchup
Fresh Coriander Leaves
1/4th teaspoon Chaat Masala
Steps
Method for Buttery Corn Chaat;
Boil 2 cups of sweet corn along with 1/4 tsp turmeric powder on high flame for 3-4 minutes and then strain it.
Heat 1 tbsp butter in a pan, add the boiled corn to the butter, toss it on high flame for 3-4 minutes keep stirring, so that the corns become crispy and the butter is absorbed by the corn.
Then off the flame and remove the fried corns in a bowl.
Now take 1 cup fried corns from the bowl and keep the remaining corns aside.
First we are making Buttery Corn Chaat.
In a big bowl, add 1 cup fried sweet corns, and 3 tsp Grated cheese and mix them well as the corns are hot so the cheese will easily get melted, sprinkle fresh coriander leaves, less than half tsp red chillii powder, less than half tsp chat masala, 2 tsp lemon juice, half tsp mayonnaise, one pinch mixed herbs mix them well and serve.
Your Buttery Corn Chaat is ready.
Method for Masala Corn Chaat;
Take the remaining 1 cup fried sweet corn in a bowl add 2-3 tbsp chopped onion, 2 tbsp chopped tomatoes seedless, 1 chopped green chilli, 2 tsp lemon juice, 1/4th tsp cumin powder, 1/4th tsp red chilli powder, half tsp green chutney, 1 tsp tomato ketchup, fresh coriander leaves, 1/4th tsp chaat masala and mix them well.
You can add crushed papdi, sev or bhujiya if you want to and serve.
Your Masala Corn Chaat is ready.
