If you ever heated up a tray of pizza pockets for an after-school snack as a kid, listen up. Breakfast pockets take just a little more time to make, but are even more satisfying because you get to pick the fillings. Pick up a package of pre-made frozen pizza dough (or make your own, if you are feeling homestead-y), roll it out, and slice it into square—large for bigger pockets, smaller for mini pockets. Fill the dough with eggs, cheese, and meat if you like, bake the pockets, and breakfast is served. Better yet, you could make a batch of breakfast pockets on Sunday night and reheat one before you head to work for the next couple days.
Much as we love tradition, do not be afraid to get creative here: Try miso scrambled eggs with sautéed mushrooms and spicy chopped sausage, or scrambled egg whites with spinach, tomatoes, and goat cheese. You would be hard-pressed to go wrong here.

Ingredients
1 cup-250 ml Water
1 teaspoon Sugar
Half teaspoon Salt
1 teaspoon Clarified Butter
1 and 1/4th Cup Refined Flour
3 Eggs
1 pinch Salt
1 tablespoon Oil
1 teaspoon Garlic
1/4th cup Sweet Corn
1 big Onion
1 Green Chilli
1 medium Capsicum
1/4th teaspoon Salt
1 tablespoon Mayonnaise
2 tablespoon Pizza Sauce
1 tablespoon Olives
Half teaspoon Mixed Herbs
Half teaspoon Chilli Flakes
Clarified Butter
1/3rd cup Mozzarella Cheese
4 tablespoon Refined Flour
Half teaspoon Mixed Herbs
Half teaspoon Chili Flakes
2 pinch Salt
Crushed Cornflakes or Bread Crumbs
Steps
In a big pan, add 1 cup /250 ml water, 1 teaspoon sugar, half teaspoon salt, 1 teaspoon clarified butter, mix it and let it come to a boil then add 1 & 1/4th cup refined flour, keep mixing it with a spatula mix the refined flour properly with the water, keep it mashing when it look that all the water is soaked by the flour and it becomes little smooth than off the flame, cover it and let it cool down.
Beat 3 eggs in a bowl by adding a pinch of salt and keep aside.
Heat 1 tbsp oil in a pan, add 1 teaspoon chopped garlic sauté for a minute, then add 1/4th cup sweet corn cook it for 2 minutes on medium to low flame till the corn becomes a little soft, then add one chopped onion, 1 chopped green chilli, 1 medium chopped capsicum.
Now sauté all these ingredients for 1 to 2 minutes by stirring on low flame then add 1/4th teaspoon salt mix it.
Corner the veggies at the one side of the pan and on the empty side of the pan, add the beaten eggs and let them cook for a minute then scramble the eggs with the spatula, then mix with all the veggies.
Do not cook it too much as the eggs will turn hard, when you feel that the eggs and veggies are mixed together properly off the flame.
Now for seasoning the eggs, add 1 tablespoon mayonnaise, 2 tablespoon pizza sauce, 1 tablespoon olives, half teaspoon Mixed Herbs, half teaspoon Chilli flakes and mix it well with the egg mixture.
At this point check the salt and chilli, adjust it as per your taste.
By the time the flour has also cool down, remove it in a dish, mash it with your hands apply some clarified butter and knead to make it soft.
When the flour is done and soft keep it aside for 10 minutes.
Then make four medium balls out of the flour, take each ball and dust it with some refined flour, make a big roti out of it and then with the help of a round cutter or a glass cut the round shape rotis and keep it aside.
In the same manner make small round roti to make pizza pockets.
After cutting all the round small rotis, place it in a dish, cover it with a cloth so they will remain soft.
Now add 1/3rd cup grated Mozzarella cheese to the egg mixture, give a good mix.
Take one small roti and place this mixture in between, take 2 teaspoon mixture and then take the small roti place 2 teaspoon egg mixture in the centre of the roti, apply little water on the edges of the circle, then turn it and then press the edges to make a semicircle shape like pizza pocket.
Prepare the remaining pockets in the same manner.
Keep the egg pockets covered with a clean cotton towel while you work so they do not dry out.
In a small bowl take 4 tablespoon refined flour, half teaspoon Mixed Herbs, half teaspoon Chili flakes, 2 pinch salt then gradually add half cup water to make a slurry out of it.
Take some crushed cornflakes in a dish you can also use bread crumbs instead of cornflakes.
Heat oil in a Kadai for deep frying the Pizza pockets.
Then dip each pizza pocket in the slurry, coat it with cornflakes, then fry on medium to low flame till crispy and golden in colour from both sides.
Serve it hot with your favourite dip, ketchup or chutney.

Tips *Do not over crowd the kadai while frying, fry 2 or 3 at a time. *Pizza pockets can be refrigerated or frozen, then reheated in toaster oven.
