EGG BHURJI
Ingredients
5 Boiled Eggs
2 tbsp Oil
1 tbsp Garlic chopped
2 Onions Finely chopped
1 tbsp Coriander powder
1 & ½ tsp Chilli powder
½ tsp Turmeric powder
1 Tomato chopped
Salt To Taste
1 Green Chilli finely chopped
2 tsp Dried Fenugreek leaves (Kasuri Meethi)
¼ tsp Garam Masala powder
½ tsp Chilli flakes
1 tbsp Butter
Some Coriander leaves for garnishing
Steps
Grate the boiled eggs.
Heat oil in a pan, add and sauté garlic, add onions and cook till golden brown on high flame, keep stirring it to avoid burning of onions.
On low flame, add coriander powder, turmeric powder, red chilli powder, salt to the onion and keep mixing till the spices are cooked.
Add tomatoes, chopped green chilly and little water to cook on low flame with lid or till the tomatoes are soft and mushy.
Now put grated eggs, garam masala powder, fenugreek leaves, chilli flakes and stir it well. Add water if needed on high flame.
Add butter, mix and cook for a minute then off the flame.
