Another Egg-cellent recipe

3 Eggs
Half teaspoon of Salt
1 Green Chilli chopped
1 tsp chopped Ginger-Garlic
Green part of Spring Onion
one teaspoon of Soya Sauce
1 tablespoon of Refined Flour
1 tablespoon of Corn Flour
Half teaspoon crushed Black Pepper
1 Egg
1 teaspoon of Kashmiri Red Chilli powder
1 teaspoon of Vinegar
1 teaspoon of Soya Sauce
1 tablespoon Tomato Ketchup
1 teaspoon of Corn Flour
1/4th Cup Water
1 tablespoon of Oil
1 teaspoon of Ginger chopped
1 teaspoon of Garlic chopped
1 Green Chilli chopped
Petals of Capsicum and Onions
Half cup of Water
Green part of Spring Onion
Some Salt
Crushed Black Pepper
Steps
Take 3 eggs, boil them, peel them, and then grate them with a grater in a bowl.
Add half a teaspoon of salt, 1 chopped green chilli, 1 teaspoon chopped ginger garlic, some chopped green part of spring onion, 1 tsp soya sauce, 1 tablespoon refined flour, 1 tablespoon corn flour, half spoon crushed black pepper and mix these ingredients with a spoon.
Take one egg, beat it and then add to this mixture gradually and keep mixing it with a spoon to make a mixture as you make for pakodas.
Do not add the whole beaten egg, add as much as required to bind the mixture.
In a small bowl take 1 tsp Kashmiri red chilli powder, 1 tsp vinegar, 1 tsp soya sauce, 1 tbsp tomato ketchup mix all these sauces and keep aside.
Take one small bowl, add 1 tsp corn flour and 1/4th cup of water, mix it and make a slurry and keep aside.
Now heat oil in a kadai, make small balls of egg mixture, deep fry them on medium flame, till golden brown and then remove them from the oil and keep aside.
Heat 2 tbsp oil in a wok add 1 tsp chopped garlic and ginger, 1 chopped green chilli, sauté on high flame for half a minute, then add the petal of onions and capsicum.
You can use any colour of capsicum you like.
Fry them for half a minute on high flame and then add the sauce that you have prepared by adding 2 tbsp water.
On high flame keep stirring it and cook for 1 minute till all the sauces are properly cooked, then add half cup of water.
Now let it come to a boil, then reduce the flame, add the cornflour slurry and immediately mix it and keep stirring, to avoid lumps in the gravy.
Cook it for 1-2 minutes till the corn flour is properly cooked.
Then add chopped Green part of spring onions, a little salt, some crushed black pepper, fried egg balls mix it with light hands.
Toss it on high flame for 2 minutes till the gravy becomes a little dry, you can check the salt at this point.
After tossing it for 2-3 minutes off the flame and let it rest for 10 minutes.
You can serve it hot with fried rice, roti, chapati or plain rice.

Tips: *To get that Chinese flavour and taste always toss it on a high flame. *Chop Ginger and Garlic as finely as possible. *You can use ready-made Chinese Chilli Paste or Schezwan sauce instead of Red Chilli powder. *If the Sauces are too thick, they do not stick to the Egg balls properly. Remove the Manchurian when the Sauces are in a semi gravy form, otherwise they become hard. This way they remain soft and tasty even when they become cold.
