Ingredients
2 Tbsp Oil
1 Tbsp Chopped Garlic
1 Chopped Onion
1 Chopped Red Capsicum
2 Green Chillies
3 Tomatoes
Salt
2 Tsp Red Chilli Powder
1/2 Tsp Cumin Powder
1 Tbsp Tomato Paste
1/2 Tsp Sugar
4 Eggs
Crushed Black Pepper Powder
Chilli Flakes
Few Coriander Leaves
Steps
1. Heat 2 Tbsp Oil in a pan, add chopped Garlic and chopped Onion and sauté it for 2 minutes until onion becomes translucent.
2. Add chopped Capsicum, Green Chillies and sauté it for 3 to 4 minutes. Add Tomato puree and salt as per taste.
3. Add Red Chilli Powder, Cumin Powder and Tomato paste. Mix everything well and let it boil. Now cover and cook the mixture for 10-12 minutes on low flame.
4. Add ½ Tsp Sugar and mix well. Make small wells in the mixture and pour the eggs into each well.
5. Cover the pan and cook it for 3 to 4 minutes on low flame for soft cooked eggs (if you like your eggs hard, you can let them cook a bit longer).
6. Add crushed Black Pepper, Chilli Flakes and few Coriander Leaves (Parsley alternate option).
7. Serve Hot and tasty Egg Shashuka for breakfast with toast bread.
