So naturally, I am a bit bias towards the Bombay Potatoes. They are not only, spicy and flavourful, but quick and easy too. You can make these in less than 20 Minutes.
Chatpate Masala aloo or Bombay Potatoes is the perfect appetizer, side dish or main course as per your preference. It tastes best with delicious Indian Meal or a star dish on its own. A flavourful spicy Aloo recipe tossed in spices to serve for your next weekend party or simple comfort meal.
But there is one-star ingredient that is mostly present on the table in some form or other. Aloo Vada, Aloo Tikki, Sesame Potato/Til wale Aloo, chutney aloo, Aloo paratha there is always a potato snack recipe that tastes best. You can read and make these dishes as well.
Of all these Indian potato recipes, the Aloo masala recipe is always my first preference. And why not? Who does not love spicy potatoes! They absorb any flavours so beautifully and taste so good. I am sure all of you can relate to me here. We all are potatoes fan. Potatoes are easy to make and healthy for health.
We all love aloo, dont we?? In this masala aloo recipe, boiled potatoes are stir-fried and tossed into aromatic spices. Best thing is it comes together in just 10-15 Minutes. I have always been a fan of spices, and since the time I started cooking! I am amazed at how adding one spice or replacing it with other makes so much difference in taste. There are many Aloo recipes to try. These days, this is our favourite way to eat potatoes.
Now if you are still thinking why these are known as Bombay potatoes. I think it as just a fancy name for chatpate aloo we all have grown up eating. The only difference is they look fancy with baby potatoes and look good when served as an appetizer.
Yes, I did say both quick and easy, quick because the cooking time is less than 20 minutes and easy because all you need is some potatoes, water and spices. Oh, yeah! All you need to do is, boil the potatoes and stir them in aromatic spices and the tangy Chatpate Masala Aloo is readyBeginners can always make this spicy Indian starter in the first go. You can have the Chatpate Aloo with green chutney for an evening snack or as a party appetizer!

Fukni Batate (Aloo)
Ingredients
2 to 3 tablespoon Oil
1 tablespoon Chopped Garlic
5 to 6 Curry Leaves
3 medium sizes Boiled Potatoes
1 tablespoon Kashmiri Red Chilli Powder
1 teaspoon Salt
2 tablespoon Tamarind soaked in water
1 pinch Garam Masala Powder
Some chopped Coriander Leaves
Silver Foil paper
Some Wooden Sticks
Spring Roll Sheets
Refined Flour
Some Water
Oil for frying
Steps
Boil 3 medium size potatoes and cut them medium into pieces.
Take 2 tablespoon tamarind soak it in water for 20 minutes then mash and squeeze the pulp from it.
Heat 2 to 3 tablespoon oil in a kadai, add 1 tablespoon chopped garlic, sauté till light golden, then add 5 to 6 curry leaves, stir it then add 3 medium size boiled potatoes, then stir fry the potatoes with the garlic on high flame for 2 minutes.
After 2 minutes low the flame and add 1 tablespoon Kashmiri red chilli powder, 1 teaspoon salt and stir fry for a minute, then add the Pulp of tamarind, 1 pinch garam masala powder, mix it and then cover and cook for 5 to 6 minutes on low flame till the water of the tamarind is dried up.
After 5 minutes check the potatoes if done, sprinkle some chopped coriander leaves, then cover it and off the flame and keep the potatoes aside.
Your Hot Potatoes are ready.
Now let us prepare the Fukni;
Take some wooden skewers, now cut the silver foil sheet according to the length of the skewers.
Now place the skewes on the silver foil and roll it tight to make a long stick, press the edges of the foil paper.
Make 3 to 4 long sticks of silver foil like this.
Take some refined flour Add water mix it together to make thick slurry to stick the spring roll sheets.
Now take one spring roll sheet ,fold it into double, then put this long stick foil on it and roll It till the end of the sheet, then apply the slury on the edge of the sheet and stick it to the make a fukni roll .
Prepare 3 to 4 fukni roll like this.
Heat oil in a Kadai add this spring roll sheet with the foil and deep fry on medium to low flame till crispy and golden brown in color.
Then remove them from the oil and after a second, pull the silver foil stick from the fried spring roll sheet carefully to get long fukni roll.
Now you can use this silver foils sticks for another sheet, in the same manner prepare as many fukni you want to from the spring roll sheets.
Now let us serve it, take one Fukni roll fill hot potatoes inside the fukni by pressing it with light hand from both the sides of the fukni.
Your Fukni Aloo is ready, you can have it with chutney or tomato ketchup.

Tips; *Boil potatoes with 1 tbsp salt and peel. Adding salt is really important as the potatoes absorb it in boiling . *And make sure to cool your potatoes before making the masala otherwise hot potatoes will break.
