Ingredients
2 tbsp Fenugreek Seeds (methi dana)
50 gm Sesame Seeds
50 gm Poppy Seeds
100 gm Melon Seeds
100 gm Grated coconut
1 cup Lotus Seeds
1 cup Pure Ghee
100 gm Edible Gum (goond)
100 gm Almonds
100 gm Cashew
50 gm Pista
50 gm Raisins
4 tbsp Gram Flour
300 gm Wheat Flour
2 tsp Ginger Powder
1 pinch of Salt
Grated Nutmeg
250 gm Jaggery Powder
Steps
1. Preheat a big kadai on low flame for 10 minutes. Roast fenugreek seeds for a minute keep stirring on low flame; when done remove it from the kadai and keep aside.
2. Now add sesame seeds, poppy seeds, melon seeds and grated coconut in the kadai and dry roast all of them on low flame for a minute by stirring occasionally as these seeds get roasted quickly so do not change its colour to brown else it will taste bitter. Dry roast them, off the flame and transfer it into dish.
3. In the same kadai, now add a cup of lotus seeds and dry roast them by stirring for 3 to 4 minutes till it changes colour and turns crispy. Then off the flame and remove them from the kadai and keep aside.
4. In the same kadai take 2 tbsp of ghee from one cup ghee mentioned in the given ingredients and heat it; then on medium flame add some edible gum (goond) to the ghee and keep stirring as it blows up when heated, do not add all the 100 gm of edible gum together in the kadai as it takes space when heated and becomes bigger than its size so take some and fry till it turns bigger and you will see it crackles when put in the ghee, so keep stirring and when it stops crackling and turns bigger remove them from the kadai. Repeat this process in 3 to 4 batches on medium and low flame by adding some edible gum and frying them, add ghee if required and remove them from the kadai and keep aside in a dish.
5. In the same kadai add 1 tbsp ghee and fry the almonds for a minute on low flame then add cashew and pista and fry them also for a minute with the almonds by stirring occasionally. Do not fry it too much otherwise the dry fruits will become bitter.
6. Add the raisins in the last and fry for a minute on low flame till all dry fruits are crispy.
7. Remove them from the kadai and keep aside.
8. Now heat 2 tbsp of ghee from one cup of ghee and add the gram flour to it and sauté for a minute by stirring on low flame till it gives a good smell and do not change the colour of the flour.
9. Add the wheat flour to this and keep on mixing and roasting it for 18 to 20 minutes, do this process patiently and carefully as it gives a good and crunchy taste to the laddos until it turns golden brown.
10. Add ghee in between if required from one cup of ghee, now you will see that all the ghee from one cup is used in roasting the flour. When the flour mixture turns golden brown and emits a good aroma add cardamom powder, ginger powder, pinch of salt, half nutmeg grated and mix it well and keep stirring and roast it for 8 to 10 minutes on low flame, this will give a perfect light brown colour of the flour and a refreshing good smell .
11. Off the flame and transfer this flour in a big dish and allow it to cool.
12. By this time the edible gum (goond) must have also cooled, so crush it with your fingers or with the help of lower portion of a small bowl press the goond and it will be crushed coarsely. You can also use a mixer jar to make a coarse powder.
13. From the roasted dry fruits remove raisins and keep aside and grind the dry fruits to a coarse powder and add this powder to the crushed goond.
14. If you have elderly people in your family who will have the laddos, grind the dry fruit into a fine powder as it may be difficult for them to chew it.
15. Now grind the sesame, poppy, melon seeds and grated coconut that you have roasted into a coarse powder separately.
16. Grind fenugreek seeds (methi dana ) into a fine powder separately.
17. Crush or grind the lotus seeds into a coarse powder separately and put all these powder to the goond bowl and mix it properly.
18. Add the roasted flour to it and raisins and mix it with your hands.
19. Heat 4 tbsp water in a small kadai add jaggery powder to it and make a syrup on medium flame till it melts by stirring for a minute and off the flame.
20. Pour this syrup into the center flour mixture and mix it with a spoon as the syrup is hot. Gradually as the mixture gets warm use your hands to mix it properly.
