An extremely healthy and protein-rich dessert recipe prepared with lotus seeds, dry fruits and jaggery. It is an excellent source of protein, nutrients and supplements, and hence it is typically prepared during the festival season or fasting season. It is typically prepared with a combination of lotus seeds or makhana seeds with different types of dry fruits, nuts and raisins.
It will also help in sharpening the mind and also strengthening the bones.
A unique variation to the typical halwa recipe, lotus seeds known as phool makhana is prepared from roasted makhani, ghee and jaggery. A simple and quick dessert item, is best enjoyed with chopped nuts as topping.

1 cup Ghee
200 grams Almond
200 grams Walnut
3 cup Lotus Seeds
1 cup Roasted Bengal Gram
1 cup Powdered Jaggery
1 teaspoon Dry Ginger Powder
A Pinch of Saffron

Take a big Kadai keep it for heating, add 1 tablespoon ghee from 1 cup of ghee to this kadai, add almonds approx. 1 cup, in weight 200 grams of almonds, add 1 cup walnut i.e. 200 grams. Keep stirring and roast it for 2-3 minutes on low flame .
By doing this, if there is any moisture left in them will disappear, it will give you a good and crunchy taste.
It has been 2-3 minutes now take them out, put it in a utensil .
In the same kadai had 3 cups of lotus seeds, keep on low to medium flame, roast it by stirring for 2-3 minutes, until it turns crispy.
No Ghee is added, it is not necessary to add, it will roast well without ghee also.
To check that the Makhanas are well roasted, press it with your fingers and check it if it breaks easily then it is done.
Off the flame, remove the makhanas from the pan and keep aside.
When the makhanas have cooled down put them into a mixer grinder and make a fine powder out of it.
Grind dry fruits into a coarse powder, it will give a good texture to the halwa, do not make it into fine powder .
Mix the makhana powder and dry fruit coarse powder together.
Roasted gram contains iron, zinc, magnesium, manganese, phosphate and many other minerals. It is rich in fibre and also keeps our digestive system healthy.
Take a cup full of roasted grams and make a fine powder, you can peel them if you want, we have not taken it out. Make a fine powder of roasted gram.
Heat a pan and add 1 cup of ghee, we just took around 1 tablespoon of ghee from this to fry the dry fruits
Heat the ghee on very low flame, add all the things that we have grinded and kept ready.
While roasting on low flame we have to stir it for 4-5 minutes so that it does not burn, stir it for a while , together we will also prepare jaggery syrup.
Do not put sugar in it, make completely healthy halwa.
Take 1 cup powder jaggery in a utensil, you can also use whole jaggery by cutting into small pieces, add 2 cups of water in 1 cup of jaggery and cook it on high flame.
Let the syrup cook, add dry ginger powder which has many benefits in winter.
Along this we will add 1 more thing which is also very beneficial and useful . Add a pinch of Saffron it has many benefits, it increases immunity helps us to cure cough headache and many types of allergies.
Boiled for 2-3 minutes by increasing the flame do not cook too much 2-3 minutes is sufficient off the flame and check the dry fruit.
Check the dry fruits and makhanas in between and give a mix. It has roasted very well , then off the flame.
Do not put jaggery syrup in it by keeping the flame on, it may splash too much so after putting off the flame wait for 1-2 minutes to avoid any accident.
After 2 minutes slowly pour this jaggery syrup and mix it.
On the flame now keep it low and stir it. The texture of halwa is will turn out to be good, cook it on a low flame by stirring since the dry fruits were not completely powdered thats why the texture is turned out to be very good.
Cook on low flame for 5-6 minutes by stirring it till the ghee separates from it, then off the flame.
You can eat it by putting it in the refrigerator for 3 weeks.
Make it carefully try not to keep water in the Jar of the mixer grinder, all the things have to be kept dry which will increase its shelf life.
Store it in the fridge for 3 weeks eat a little bit everyday and give to your children also.
Just 1 tablespoon of this halwa is enough there is nothing better than this if you eat every morning take this along with hot milk.
