Ingredients
250 gram Boneless Chicken
1 teaspoon of Ginger-Garlic Paste
1 teaspoon of Soya Sauce
2 to 3 Green Chilli Paste
Half a teaspoon White Pepper Powder
Salt
2 tablespoons of Corn Flour
1 Egg White
1 teaspoon of Red Chilli Powder
1 pinch Red Food Colour
1 teaspoon White Vinegar
Half teaspoon Chat Masala
1 teaspoon of Garam Masala Powder
1 Onion
1 Capsicum
2 Garlic Cloves chopped
A Pinch of Salt
2 pinch White Pepper Powder
Half a teaspoon of Chilli flakes
1/4th teaspoon Honey
Green Onion Leaves
2-3 tablespoon Mayonnaise
Steps
Marination of the chicken cubes;
Take 250 grams of boneless chicken, wash and clean it, chop them in cube shape.
Make sure the chicken pieces are dry before adding the spices.
Then add 1 tsp ginger garlic paste, one teaspoon soya sauce, 2-3 green chilli paste, half tsp white pepper powder, salt, 2 tbsp corn flour, 1 egg white, 1 tsp red chilli powder, 1 pinch red food colour,1 tsp white vinegar, half tsp chat masala, 1 tsp garam masala powder.
Mix everything thoroughly to ensure that the masala is evenly spread across all the chicken pieces.
Marinate the chicken for half an hour.
Take 1 onion and cut into petals, cut 1 capsicum and cut into small pieces as of the size of the chicken cubes.
Soak the wooden skewers in a glass of water for 10 minutes.
This will prevent the sticks from burning when being fried.
Now weave one marinated chicken piece into the skewer, one petal of onion, again weave another chicken cube and then weave one piece of capsicum.
Follow this step to marinate all the chicken pieces into the skewers. After preparing all the chicken pieces in the skewers let it marinate for some time.
By the time you can prepare a special dip for this Kandi Chicken.
Finely chop 2 cloves of garlic, put it in a small bowl add a pinch of salt, 2 pinch white pepper powder, half tsp chilli flakes,1/4th tsp honey, some green leaves of spring onion chopped and lastly 2-3 tbsp mayonnaise.
Mix it thoroughly and your special dip is ready.
Now let us fry the chicken kandi.
Heat oil in a Kadai to Deep fry the chicken sticks, fry this kandi chicken on medium flame for 3-4 minutes on one side, then turn and fry it for 3-4 minutes till done.
Remove it from the oil and serve hot with the special mayo dip.

Points to Remember *Marinate the chicken for more time if you can. *Do not overcrowd the Kadai while frying the sticks. Fry only 2-3 sticks in one round. *You can make mint coriander chutney if you do not prefer a mayonnaise dip.
