When you can’t go to KFC, Bring KFC home. Perfect starter/evening snack for Sunday loaded with veggies and tastes heaven when served with sauce. This recipe is a blend of healthy veggies and spices. This will surely be a hit amongst kids.

Ingredients
1 tbsp Corn Flour
1 tbsp Oil
1 tsp Cumin
2 tsp Chopped Garlic
1 Onion chopped
2 Green Chillies chopped
½ Carrot chopped
3 tbsp Green Peas boiled
3 tbsp Sweet Corn boiled
3 tbsp Capsicum chopped
1 tsp Salt
½ tsp Mixed herbs
1 tsp Chilli powder
¼ tsp Pepper powder
4 Potatoes boiled and grated
3 tbsp Corn Flour
3 tbsp all-purpose flour (maida)
2 pinch Salt
½ cup Water
Some Cornflakes and Bread Crumbs
Steps
Take 1 tbsp corn flour, add little water to make a slurry and keep it aside.
Heat oil in a pan, add cumin, chopped garlic, onion and green chilli sauté for 2 mins.
Add peas, carrots, capsicum, corn, salt, mixed herbs, chilli powder, pepper powder and sauté this seasoning for 3-4 mins on low flame.
Add the boiled and grated potato to this seasoning and mix it well, add the slurry on low flame. Mix it well until the mixture turns like a ball for 2 mins then off the flame.
Take a square or rectangle dish, grease it with oil and spread this mixture on the dish and level it upto 2-3 cms.
Cover the dish with plastic sheet and keep it in freezer for 1 hour. Remove it from the freezer and cut it with a knife into thin long strips.
In a bowl, mix corn flour and all-purpose flour both should be of equal quantity, add salt and half cup water to make thick slurry.
Crush the cornflakes in mixer into a coarse powder. Now add bread crumbs to the cornflakes take same quantity of both and mix it.
Dip the long strips in the slurry and then coat it with cornflakes and crumbs repeat this step again of dipping and coating to make the strips crunchy.
At this point you can store these veg strips in the freezer for one month.
Deep fry these strips in hot oil till golden brown and crunchy on low to medium flame.
