Usually known as dim sims but here in india they are also know as momos. An indo chinese delicacy.

Ingredients
• 2 cups / 250 gms all-purpose flour
• salt to taste
• 2 tbsp oil
• 350 gms boneless chicken
• 1 big finely chopped onion
• some chopped spring onions
• 1 green chilli finely chopped
• 1 tbsp chopped garlic (5 to 6 cloves)
• ½ tbsp soya sauce
• ½ tsp black pepper powder
• 1 tsp chilli flakes
• salt to taste
• 2 tsp ghee
• For the chutney
3 tomatoes
3 dried red chillies
5 garlic cloves
½ tsp kashmiri chilli powder
1 tsp white vinegar
½ tsp sugar
salt to taste
Steps
1. In a large bowl, mix together all-purpose flour, oil and salt with the fingertips of your hand.
2. Knead a dough out of the mixture by adding water gradually. The dough should be neither too soft nor too hard.
3. In a chopper/ mixer grind the chicken pieces until a fine consistency in achieved.
4. Put this minced chicken in a large bowl and add in 1 big finely chopped onion, chopped spring onions/ coriander, finely chopped green chillies chopped garlic, soya sauce, black pepper powder, chilli flakes, salt and ghee. Mix them nicely until well combined and let the mixture sit for 15-20 mins
5. For the chutney, heat 2 glasses of water in a vessel. Toss in the tomatoes (use ripe ones for this recipe) and dried red chillies. Boil them for 4-5 minutes on high flame until the skin of the tomato starts to separate
6. Peel off the skin of the tomatoes and cut them up and put them into a blending jar along with the boiled red chillies.
7. Into it, add in 4-5 garlic cloves. ½ tsp kashmiri chilli powder,1 tsp white vinegar, ½ tsp sugar and salt according to taste. Blend all these ingredients into a fine paste. Take it out in bowl and set aside.
8. To make the momos, take small balls of the kneaded dough. Dust them in flour and then roll them out thinly. (The edges should be especially thin)
9. Place 1 tbsp of chicken mixture in the centre of the rolled out momo. Dip your finger in water and wet the edges. Seal the momos by lift and overlap technique.
10. To steam, heat around half a litre or water and bring it to a boil.
11. Grease a large strainer with some oil. Place the momos on it and then place the strainer onto the boiling water taking care that the water does not touch the strainer
12. Cover and steam on high flame for around 12-15 mins.
