Ingredients
4oo gms Mutton Chops
2 tbsp Oil
1 tbsp Ginger Garlic paste
1 tsp Salt
Little Turmeric powder
2 tsp Coriander seeds
10/12 Black Pepper corns
1 tsp Cumin
3 Dried Red chillies
1/2 cup Curd
1/4 tsp Garam Masala powder
1/2 tsp Fenugreek Leaves( kasuri methi)
3 to 4 tbsp Oil
2 Bay Leaves
Paste of 3 Onions
1 tsp Yellow Chilli powder
Puree of 1 Tomato
1/2 tsp Salt
Slices of Potato
2 Green Chillies
Steps
Clean and Wash the mutton chops.
Heat 2 tbsp oil in a pressure cooker, put the washed mutton chops to the oil and fry them on high flame for 2 to 3 minutes. Then add ginger garlic paste, salt fry them with the mutton chops on medium flame for 3 to 4 minutes, pour half cup water, turmeric powder and give a good mix, pressure cook it on high flame till one whistle, reduce the flame cook for 5 minutes.
Do not overcook the mutton chops as they get tender quickly ,or else the mutton will separate from the bones.
Take coriander seeds, cumin, black pepper corns, dried red chillies in a pan, dry roast them for a minute, grind them into a coarse powder .
Take curd and mix this coarse spice powder to it, add garam masala powder, dry fenugreek leaves (kasuri methi) a little roasted and crushed with hands, give a good mix and keep aside.
Heat 3 to 4 tbsp oil in a kadai, add bay leaves, onion paste and sauté till onions are pink, keep stirring.
Check the mutton chops from the cooker, if little tender then it is done because it will be cooked further also. There will be some soup left with the mutton chops .
When onions turns pink, add yellow chilli powder, if you do not have it you can use red chilli powder also, sauté for half a minute add tomato puree and little salt as the mutton chops also has salt, cook on high flame till it boils, reduce the flame, cook for 5 to 7 minutes till tomatoes are cooked.
When tomato cooking is over transfer the curd mixture to it pour a little water in the curd bowl, pour this water to the gravy, cook on medium flame till it comes to boil, then reduce the flame, cook it for 5 to 7 minutes.
When this cooking is over, transfer the mutton chops with the soup to it and little water, give a mix, put some potato slices, seal the kadai with a lid, let it cook for 10 to 15 minutes on low flame till potatoes are soft and oil floats.
When done sprinkle chopped coriander, green chillies, off the flame ,let it rest for 10 minutes.
Enjoy your mutton chops with rotis, paratha, steam rice or naan.

Important Tip *To make this dish a success right combination of spices and cooking on medium to low heat is important * Do not pressure cook the mutton chops too much, do not overcook it.
