Ingredients
4 Goat Paya (trotters) cleaned and washed
1 Onion sliced
1 tbsp Coriander Powder
1 tsp Cumin
¼ tsp turmeric powder
10-12 Black Pepper Corns
½ tsp Salt
1 tsp Ginger Garlic Paste
2 tbsp Oil
1/3 cup Fried Onions
4 tbsp Curd
¾ tbsp Oil
3 Cloves
2 Green Cardamoms
1 Cinnamon
1 tsp Ginger Garlic Paste
2 tsp Red Chilli Powder
Salt
Pinch of Garam Masala
2 Green Chillies
Steps
In a pressure cooker put paya, onion, coriander powder, turmeric powder, cumin, whole pepper corns, 1 tsp ginger garlic paste, salt, 2 tbsp oil and 2 cups of water mix it and cook it on a high flame till one whistle and on low flame for 20-25 mins. Let the pressure release naturally.
Make a paste of fried onions and curd.
In wok heat ¾ tbsp oil, add cloves, cardamom, cinnamon, 1 tsp ginger garlic paste and sauté for a minute on low flame.
Add red chilli powder and stir it add a splash of water and cook for a minute then add the curd onion paste, salt and keep stirring for a while, pour the paya with its liquid soup into this gravy and mix it well .
Add little water as your choice for gravy.
Cover it and cook for 15-20 mins so all the spices are mixed properly then sprinkle a pinch of garam masala powder and slit green chillies.
Your mutton paya is ready. Serve it hot with naan or rumali roti
