Noodle Pakora is one fusion snack recipe that is made with fresh noodles. The noodles when mixed with various vegetables and flavoured with tastemaker and Indian spices makes for an amazing crunchy munchy snack that is loved by kids the most and also makes a perfect snack option in your brunch parties.
Noodle Pakora is an ideal tiffin snack for fussy kids who do not like to eat vegetables. This crunchy snack feeds them with all the goodness of vegetables as well.
Serve it hot with green chutney, any of your favorite dip or a simple tomato sauce does wonders too.
Noodles Pakora are pakoras with a slight twist of noodles. Pakoras are an all time favorite snack in India and perfect for a rainy day or winter day or even for a cocktail party.
Noodles fritters are literally delicious, crisp deep-fried evening snack that is made of boiled spiced noodles, gram flour some veggies.
Noodles pakora has a bit different taste from other pakora varieties due to making with noodles. Easy to make and hardly takes 20-25 minutes to be prepared. You can do variations by adding veggies of your choice.

Ingredients
1 medium size Capsicum sliced
3- 4 tablespoon Sweet Corn
3-4 tablespoon Onion of Spring Onion sliced
1 medium size Carrot grated
1/2 teaspoon Salt
1 teaspoon Chilli Flakes
1 tablespoon coarsely Grounded Coriander
1 teaspoon Cumin seeds
1/4th teaspoon Turmeric powder
1 teaspoon Ginger-Garlic paste
2 Green Chillies chopped
1/2 teaspoon Crushed Black Pepper
1 Egg
Green of Spring Onion
Fresh Coriander
2 cups of Noodles
1/2 cup Corn Flour
Steps
In a big bowl, add 1 medium size sliced capsicum, 3-4 tbsp sliced onion of spring onion, 3-4 tbsp sweet corn, 1 medium size grated carrot, 1/2 tsp salt, 1 tsp Chilli flakes, 1 tablespoon coarsely grounded coriander, 1 tsp cumin seeds, 1/4th tsp turmeric powder, 1 tsp ginger-garlic paste, 2 green chillies chopped if you eat less spicy then add less Chillies, 1/2 tsp crushed black pepper.
Mix all this veggies well with the help of your hand so that the veggies are mixed well in their own juices.
Add 1 egg beaten, some Green parts of spring onion, chopped coriander leaves mix all these ingredients properly.
Now add 2 cups of boiled noodles into the bowl and mix well with the vegetables.
Take thin Noodles or as whatever is available, add 1/2 cup of corn flour for binding the mixture till it becomes a sticky and thick mix(do not add water)
Now mix all this with light hands and the mixture will be ready.
If the mixture is looking little watery add some more corn flour to bind it.
Heat oil on a medium flame in a wok to deep fry the pakodas.
Scoop out a spoon full of noddle mix and gently shape into a pakoda, and drop it carefully in the hot oil.
Deep fry the Pakodas till Golden in colour.
Collect them on a kitchen towel to absorb excess oil.
Steaming hot and crispy noodle pakodas are ready.
Serve it with tomato ketchup or green coriander chutney and enjoy eating.

Points to Remember *An important thing that should keep in the mind to making noodles pakora is that do not cook the noodles in a large amount of water. *Secondly do not overcook the noodles otherwise, pakora will not make crisp and they turn soggy. *Do not add water for mixing noodles with corn flour, just splash some water to make batter if needed. *Oil temperature should be medium-hot . *These pakoras are fried on the medium-low flame as they take little time to be fried if you will fry pakoras on high flame they will burn and fry on low they turn soggy and will not make crisp.

Carrot is good for your eyes to keep them healthy.
