Do you love prawns? Blame it on the weather. This simple prawn curry is a must try as it has got all the flavors, tanginess and spice from the ingredients used. Prawns curry with hot steamed rice, heavenly combo.

Ingredients
1 tsp Cumin
8-10 Garlic Buds
1 Green Chilli
Some Coriander leaves
½ Cup Fresh Coconut pieces
4-5 Curry leaves
Grind into a paste the above ingredients
2 tsp Kashmiri Red Chilli powder
¼ tsp Turmeric powder
1 tsp Salt
3-4 tbsp Oil
8-10 Curry leaves
2 Dried Red Chilli
5-6 Kokam leaves (soaked in little water)
½ tsp Lemon juice
1 Cup Prawns( washed and cleaned)

Steps
Make a fine paste of cumin, garlic, green chilli, coriander leaves, coconut pieces, curry leaves as mentioned above in the ingredients section by adding some water.
Then add turmeric, red chilli powder and salt to this paste and mix it.
Heat oil in a wok, put curry leaves, dried chilli and after a minute pour the grinded paste in the pan and cook it for 3-4 mins on high flame. Reduce the heat and cook it for 10-12 mins and keep checking so that it does not burn.
Add 1 cup hot water for making gravy as you wish for the consistency of the curry.
When the curry starts boiling put the soaked kokam leaves with the water in it and add lemon juice for tanginess. Wait till it comes to a boil, now add prawns to the curry and cook on high flame for 2 mins. Reduce the flame, cover the pan and cook for another 3-4 mins till the oil separates. A hint to not overcook the prawns else the prawns will harden.
Sprinkle some chopped coriander leaves. Let the gravy rest for 10 mins after turning off the flame.
