Malpua are sweet pancakes made during festivals like holi and diwali. Malpuas are mostly served as a dessert snack with rabdi or with some nuts sprinkled on top.
Malpua sweets are a popular dish in Odisha, Bihar, Bengal and even in Bangladesh, muslim families and are prepared during the holy month of ramadan.
Malpua is a very exotic dessert served with rabri. It is basically a pancake dipped in sugar syrup and served with a warm rabri topped with pistachios.
Malpua is a rich dessert that will make your meal special if this is served for dessert. Malpua is often made for festivals and occasions. Soft juicy inside with a slightly crispy outside with rabri as topping this dessert is heaven.
This easy instant malpua recipe is for a sweet treat. You can whip up fluffy and delicious malpuas in no time with just a few ingredients. Make your own dessert by serving them with syrup or ice cream.
This is every Indian sweet-lovers delight. Surprisingly easy to make, the golden Malpuas are served with a topping of creamy chilled rabri/rabdi, coming together to create an absolutely indulgent creation that you cannot stop eating. Malpua Rabri is one such dessert that is easy and quick to prepare yet flavourful.

Ingredients
2 cups- half litre Milk
Saffron Threads
3/4th Cup -150 grams of Sugar
2 tablespoons of Dry Fruit
1/2 teaspoon Cardamom powder
1 & 1/4 teaspoon Yellow Food Colour
1 & 1/2 cups of Refined Flour
1pinch Baking Soda
1 Egg
Steps
Heat 2 cups milk that is 1/2 litre milk in a saucepan and boil on high flame, add few saffron strands, 3/4th cup sugar i.e. 150 gms sugar stir it and boil the milk for 2-3 minutes till the sugar is melted.
Then turn off the flame and let the milk cool down.
Now transfer the milk into a big bowl, add 2 tbsp of chopped dry fruits such as almonds, pista and cashew, 1/2 tsp cardamom powder, 1/4 teaspoon yellow food colour and mix it properly.
Take 1 & 1/2 cup refined flour and sieve it in a strainer then add this refined flour to the milk mixture and with the help of a whisker mix it thoroughly to avoid lumps.
You can make 8 Malpuas out of this mixture.
Cover it, keep aside for 15-20 minutes.
After 20 minutes add a pinch of baking soda to the batter and whisk it for 2 minutes.
Now lets fry the Malpuas;
Add baking soda just before making the malpuas.
Take one egg in a bowl, beat it and then take half a cup of Malpua batter and add it to the egg, mix it properly.
Heat ghee in a big pan on medium flame to deep fry these malpuas.
You can use oil also for frying as your choice.
Use a large quantity of oil or ghee for frying the Malpuas for best results.
Now pour this batter mixed with egg in the centre of the pan.
The batter will spread in the whole pan and let it cook for 1 minute on one side, keep checking with a spatula till golden brown on one side.
Then carefully turn it to the other side and cook for 1-2 minutes till golden brown on the other side.
Your hot and soft fluffy Malpuas are ready to serve.
When done drain ghee and remove it in a dish.
When the Malpua is hot garnish it with some chopped dry fruits if you like.
Piping hot Malpuas paired with cold creamy rabdi is absolutely divine and a classic combination of Malpua and rabdi.

Points to Remember *You can substitute plain flour with wheat flour too. *You can shallow fry in ghee too. *Cook the malpuas in low medium flame until crisp at the edges. *If the batter consistency is too thin then it will spread out while pouring itself, so add a little more flour whisk it and then try again. *While making the batter make sure there are no lumps in it and it should be smooth in consistency. *Do keep the batter aside for 15-20 minutes to set and prior frying the malpuas whisk the batter well. *Malpua with ghee will taste richer than that with oil.
