Ingredients
• ½ cup gram flour
• 1 tsp hot ghee
• ½ tsp coriander seeds
• ½tsp cumin
• 6 black pepper corns
• salt to taste
• 1 green chilli chopped
• 1 tsp red chilli flakes
• some coriander
• 1 & ½ cup curd
• ¼ cup gram flour
• 2 tbsp oil
• ½ tsp mustard seeds
• ½ tsp cumin
• 2 green chillies (slit)
• 3 dry red chillies
• 8 curry leaves
• ¼ tsp asafoetida (hing)
• 1 tbsp chopped garlic
• ½ tsp plus ¼ tsp turmeric powder
• 2 tbsp onions chopped
• pinch of baking soda
Steps
1. First, we will prepare the pakoras. In a large bowl, mix together the following ingredients: gram flour, hot ghee(hot oil can also be used), ½ tsp coriander seeds+ ½ tsp cumin+6 black pepper corns (all ground together roughly), salt, chopped green chilli, red chilli flakes and some chopped coriander.
2. Toss them together and keep adding water gradually until it turns into a paste with no lumps. Cover and set aside for 15-20 mins.
3. For the kadhi, in a large bowl, blend together gram flour, curd and around 1 litre of water. Set aside.
4. In a pan, heat 2 tbsp oil. Add in ½ tsp mustard seeds, ½ tsp cumin, 2 slit green chillies, dry red chillies, curry leaves, asafoetida and chopped garlic. With the flame on low, stir until garlic turns slightly brown.
5. Next, add in ½ tsp turmeric powder and stir lightly for 10 seconds.
6. Pour in the curd, gram flour and water mixture. Mix together on low flame and keep stirring continuously.
7. Then turn the flame to medium and add in ¼ tsp of turmeric powder. Bring the mixture to a boil. Cook on high flame for a minute, stirring continuously.
8. Then, allow the mixture to simmer on low flame for 5-10 mins until it turns thick.
9. Next, we will fry the pakoras to be put into the kadhi mixture. For this, whisk the prepared paste in one direction for around 3-4 mins.
10. Into it, add chopped onions and a pinch of baking soda.
11. Heat oil in a pan, then turn the flame on medium. Add in the pakora batter one by one and fry them until golden brown on both sides.
12. Drain on a paper towel.
13. Into the kadhi, add in salt and turn off the flame.
14. Finally, add in the fried pakodas. Give it one good mix and cover and rest for some time.
