The word kebab (کباب) is ultimately from Persian but originally meant fried meat, not grilled meat.
The classic Chicken Seekh Kebab Chutney Roll is something we all love and can have any time, for any meal of the day.

Ingredients
Coriander and Mint leaves
2 Green Chillies
2 tablespoons Fried Onions
250 grams Boneless Chicken Kheema
1 tablespoon Crushed Coriander Seeds
1 teaspoon Garam Masala powder
Salt
1 teaspoon Red Chilli powder
1/4 teaspoon Turmeric powder
1 teaspoon Ginger-Garlic paste
3 tablespoon Curd
1 tablespoon All Purpose Flour
1 & 1/2 All Purpose Flour
1/2 tsp Salt
1 & 1/2 teaspoon Oil
Little Oil
2 pinch Salt
2 Eggs
1 teaspoon Oil
Green Chutney
Sliced Onions
Steps
1. To marinate the Seekh mixture:
Take some Coriander and mint leaves, 2 green chillies, 2 tbsp fried onions, chop them in a chopper.
In a bowl take 200 grams Chicken Kheema (minced kheema should be completely dry no water should remain),add chopped ingredients, 1 tbsp crushed coriander seeds, 1 tsp garam masala powder, less than half tsp salt, 1 tsp chilli powder, 1/4th tsp turmeric powder, 1 tsp ginger-garlic paste.
To make the Seekh Kabab juicy add 3 tbsp hung curd, 1 tbsp all purpose flour, mix the Kheema with all these ingredients.
For giving the seekh kabab a smoky flavour, place a small bowl in between the chicken kheema mixture, put a burning coal in the bowl, spray some oil on the coal, cover it for 5 minutes to give a smoky flavour to your kebabs.
After 5 minutes remove the bowl from the kheema, cover the kheema and marinate it for 1 hour in the fridge, so that kheema mixture becomes a little stiff and will be easy to make the seekh kebabs.
2. Steps for kneading the dough:
Take 1 & 1/2 cup all purpose flour, add half tsp salt, 1 & 1/2 tbsp oil mix it with your fingers, then by adding some warm water gradually make a semi soft dough of the flour.
When its done apply a little oil to the dough cover it with a lid or muslin cloth and keep for 15-20 minutes to rest.
3. Now lets make the Seekh Kebabs:
To form the kababs grease your hands with some oil to make seekh kababs take wooden sticks or skewers.
Apply some oil on the stick take some portion of the kheema squeeze it on the stick, gently press it on the length of the stick to make long seekh kebabs .
When the Kabab is fixed on the stick gently remove the stick from the kebab your seekh is ready to fry.
Prepare the remaining kababs in the same manner.
Heat a Pan, add tbsp oil and shallow fry these seekh kababs on medium flame till golden brown from all sides.
When done off the flame.
Your Seekh Kebabs are ready.
Beat 2 eggs in a bowl by adding a pinch of salt .
Heat 1 tsp oil in a pan, add beaten eggs and cook for a minute, then flip it and cook for one minute on other side and remove the omlette.
Place the round omlette on a board cut in it into 4 triangle pieces and keep aside.
4. Now lets get back to the roti making;
Check the kneaded dough, its soft then make small size balls out of dough, you can make 6-7 balls out of this dough.
Make a thin roti out of small balls, prepare all rotis in the same manner.
Then place one roti on a board assemble one triangle piece of omlette on it then apply some green chutney on the omlette and then put one fried seekh kebab on the omlette piece, garnish it with some sliced onions (if you dislike onions skip it).
Then roll it tightly by covering the seekh kebabs with the roti.
Prepare the remaining rolls in this way .
Now heat oil in a kadai to deep fry these rolls .
Fry them on low to medium flame for 7-8 minutes, so that the roll is properly cooked from inside out till golden brown .
Your Seekh Kebab Chutney Roll is ready ! Enjoy if with green mint chutney, mayonnaise, lemon wedges and onion rings.

Tips * Seekh kebabs should be long in shape because they will shrink in size when they are cooked.
