Special Sunday Breakfast
Ingredients
2 to 3 tablespoon of Oil
2 medium sized Potatoes
1 Onion medium size chopped
2 Green Chilli chopped
Half cup three color Capsicum
Half teaspoon Salt
1 Egg
Half teaspoon Salt
1/4th teaspoon Black Pepper
1 & 1/2 teaspoon Of Refined Flour
Half cup Milk
3 to 4 Boiled Eggs
Half cup Processed and Mozzarella Cheese
Crushed Black Pepper
Red Chilli powder
Chilli Flakes
Coriander Leaves
Steps
Cut 2 medium size potatoes into small pieces.
Boil 3-4 eggs, cut each egg into two pieces and keep aside.
Heat 3 tbsp oil in a pan then add this potato pieces and stir fry them on high flame 3-4 minutes.
After 3 minutes add 1 chopped onion, 2 chopped green chilli cook by stirring well till onions are soft, caramelized and golden in colour.
Then add half cup tricolor capsicum, half tsp salt and cook for 2-3 minutes by stirring on low flame, then cover and cook on low flame for 2-3 minutes, so that all the ingredients are soften and cooked properly.
Crack 1 egg in a jar, add half tsp salt, tsp black pepper, 1 & 1/2 tsp refined flour, half cup milk. Mix them well to avoid lumps in this egg mixture.
Now check the potato mixture, when done set the potato mixture properly in the pan, keep the flame low, and now pour the egg mixture gradually on the potato mixture to all sides.
Now place the boiled eggs pieces upside down on this cooking omlette and sprinkle 1/3rd cup grated mozzarella and processed cheese on them.
Garnish with some chilli flakes, crushed black pepper, red chilli powder and chopped corianders leaves, cover and cook on low flame for 3-4 minutes till the cheese melts and then turn off the flame. Cut them in triangle shape pieces and serve.
You can serve them with toasted bread, roti or paratha.

Tips *You can add chopped veggies of your choice instead of capsicum. *Use whichever colour capsicum is available with you. *Do not boil the eggs too hard.
